Protein M&M Cookies
Ingredients
- 1/2 cup protein pancake mix used Kodiak Cakes mix
- 28 g coconut oil about 2 tablespoons
- 25 g unsweetened applesauce about 1 2/3 tablespoons
- 15 g m&ms or chocolate chips
- 1 tbsp honey
- 1/2 tsp vanilla extract
- dash of salt
Instructions
- Add 1/2 cup pancake mix, vanilla, butter, and applesauce to the bowl and mix to combine. .Fold in the m&ms or chocolate chips.Refrigerate the cookie dough for one hour. This step can be skipped if needed, but chilling the dough leads to the best results.Once the cookie dough has chilled, preheat your oven to 350 degrees F.Remove the pancake mix cookie dough from the fridge and use a medium cookie scoop or spoon to create 4-5 cookie dough balls. Roll the cookie dough in your palms, place them on a parchment paper-lined baking sheet.Bake the cookies at 350 degrees F for 9 minutes. Remove the cookies from the oven and allow them to cool for about 10 minutes. The cookies will settle as they cool.Enjoy!
